I have eaten them - mainly crickets and ants. And would continue to do so as long as palatable. Texture can be an issue - crunchy food, squishy absolutely not. And how they are farmed. Like most things their flavour is very much dependent on what they eat. I have tried to view them as the land equivalent of shrimp and prawns with varying degrees of success.

"Insects have been bugging me" :-D Good one!

On a personal note, I vote "No", because I no longer fancy eating animals, even insects. I may have tasted insects when I was a kid living in Africa, though I don't remember well.

If people who like eating animals transition to entomophagy, it's already good for the planet.

Yum Bug is excellent, I would highly recommend (disclosure, I know the founders). My recommendation would be to go for dishes that are unashamedly cricket, rather than trying to fill a "traditional meat replacement" niche. So whole crickets are much better, in my view, than cricket mince or 'fillets'
